The team at Tableau Bar Bistro works collectively to ensure a rich dining experience. Each member brings a wealth of industry expertise from cities abroad and restaurants in Vancouver. Leading the kitchen and crafting the menus, Executive Chef Marc-André Choquette and Executive Sous Chef Tret Jordan are redefining bistro-bar culture for the savvy dining Vancouver crowd.

Executive Chef – Marc-André Choquette (MAC)

Classic, traditional comfort food – inspired by authentic French cuisine – seafood, steaks, salads, sandwiches, chops. That’s the kind of food and mood we’re after – think Paris bistro meets New York bar. Chef MAC.

As a boy, Chef MAC savoured his aunt’s seasonal home-cooked fare, forging a lifelong love of authentic cuisine and family celebrations in his hometown of Montreal, Quebec. Later, he studied at the Institut de Tourisme et d'Hôtellerie du Quebec and apprenticed at Richard Bastien’s renowned Le Mitoyen restaurant. He honed his training in classical French cuisine at the Michelin-starred Restaurant Gill in Normandy, France.

At restaurants in Vancouver, Chef MAC was Executive Chef for eight years during Lumiere Restaurant’s peak, where he expanded his culinary repertoire and skills – including being an integral part of Rob Feenie’s winning “Iron Chef America” team. Today, with over 17 years’ experience, Chef MAC steps up to Tableau Bar Bistro, with a fresh, seasonal menu that celebrates simple French-inspired food in a comfortable, familiar setting.

Executive Sous Chef – Tret Jordan

A true Vancouverite by nature, Tret Jordan sparked his passion for fine cuisine as apprentice at the acclaimed William Tell Restaurant, after formal culinary training at Vancouver Community College, Culinary Arts School. His cooking style is contemporary with a classic edge, resting on a repertoire of experience in Europe at London's Claridge's Hotel and the Michelin-starred restaurants Putney Bridge, 1 Lombard Street Brasserie and Pied a Terre and in the USA, at the ultrachic Viceroy Hotel Santa Monica’s at Whist Restaurant.

Here at home, Tret’s earned kudos in some of the top restaurants in Vancouver including Raincity Grill, Bacchus and Opus. He gives back as a volunteer at Growing Chefs! Chefs for Children’s Urban Agriculture teaching kids about good, healthy food. At Tableau Bar Bistro, Tret puts his heart and soul into our traditional bar bistro menu and fare with his personal approach to everyday bistro dining in Vancouver.
